The Tripel that Almost Wasn’t and the Quad that May Yet Be

Well, we haven’t gotten around to blogging about the tripel because, well, we were too busy drinking it.  Because of the trouble in the brew, we weren’t quite sure what to expect.  But it turned out to be very nice, probably my favorite tripel.

It’s not quite as strong as a tripel should be, stalling out around 8.5% instead of the 9.5% we were aiming for.  But it’s nice and creamy, with a rich mouthfeel as a result of all the extra unfermented sugar.  So in many ways it’s a bit more like a dubbel.  So we’ve taken to calling it “Dubbel Axel”, since it’s more like 2.5x instead of 3x.

In any event, flush with quasi-success, we decided to brew a quad.  Well, I should say we were planning on brewing a stout, but even after trying a dozen or so of them, couldn’t agree on what we liked.  So we gave up on the stout idea and just made a Westy 12 clone.  Most of the recipes you see online have a ton of specialty malts that I know St. Sixtus doesn’t use.  So instead we went with a very elemental recipe: 16 lbs. of Pilsner malt, 3 lbs. of candi sugar syrup, Styrian Goldings and Hallertau hops, and White Labs 350 yeast.  Instead of paying a ton for the candi sugar syrup, I found a recipe online and it worked out pretty well.  It took longer than I expected to boil off the water and get the temperature up high enough to convert glucose to fructose.  But once that happened, it worked like a charm.

Unlike last time, things went off without a hitch.  The only small problem was that we had two old thermometers and they couldn’t bring themselves to agree on anything (even boiling water and ice water had 20°+ differences).  So we picked up a new candy thermometer.  Since we were also making candy, it worked out very nicely.

Fun With Refractometer

A refractometer was on my list of shiny brewing equipment I might get.  And with my hydrometer in shards, I figured now was the time to try it out.  Amazon had a ton of options, many reasonably priced, and so one arrived at our doorstep in a few days.

I was excited about using a refractometer to do gravity readings, because I’d read about it being more precise, using a tiny sample, and not having to do temperature corrections (the tiny sample makes the temperature insignificant compared to the refractometer temp.).  However, I quickly learned two things:

1. You don’t have to do temperature corrections.  But once fermentation starts, you have to do some pretty complicated math based on the original gravity.  So I still need a computer to do gravity readings once fermentation starts.

2. While in theory the display is supposed to be very precise (it’s supposed to look something like this):

So I’m not sure it’s actually any more precise.  Still, the sample size really is just a few drops, and I’m looking forward to the next brew where I can do gravity readings with hot wort and not have to use a computer to do temperature corrections.

Brewing Like a Monk

Well, maybe with a little more swearing.

My fantastic mother-in-law got me the perfect birthday present this year — Stan Hieronymus‘ Brew Like a Monk.  We’ve been thinking about brewing a tripel ever since we did a big tasting in the Netherlands earlier this year.  And we finally got organized to brew a batch today.  I went to the homebrew shop after lunch and picked up the supplies.  I hadn’t really been planning on brewing today, but I looked at my saison brewing notes (where I actually kept detailed times for everything), and realized we would have time.

So, the mash and boil all went pretty smoothly, except the wort collection ran faster than I intended and so the gravity was low.  But there was enough wiggle room with the addition of candi sugar to the boil, and evaporation, that I wasn’t really sure that it would be a problem.

But, alas, it was a problem.  So I wound up extending the boil by 15 minutes and just barely getting it up to the target (1.080).  Then the fun part started when I turned on the hose for my wort chiller and remembered that I was going to get a new hose, because it leaked last time.  But I guess laying around in the yard for two months didn’t help, because it was leaking a lot more than last time.  So I come back into the house to see a geyser of water spewing from the hose, and the output hose slipping out of the sink onto floor.

I yelled for help and madly grabbed towels to contain the damage.  After some decidely un-monk-like swearing, we got it mostly under control and down to pitching temp.  But one thing and another, we only wound up with about 3 gallons of beer.

Saison Bottling

We bottled our experimental saison mini-batches last night.  Other than almost forgetting the priming sugar, and needing to sterilize a few extra 12 oz. bottles when our 25 oz. bottles were too big for our caps, everything went pretty well.  We had five 1-gallon growlers with different yeast strains, and we didn’t want to cross-contaminate.  So we sterilized our tubing and bottling tip between each batch.  That was time-consuming at first, but we got better with practice.

We started by taking gravity readings of each batch.  Three of the batches (the plain saison yeast, Brett. Bruxellensis and Bret. Lambicus) were all right around the target gravity (1.014).  But the Brett. Claussenii and Belgian Sour Mix batches weren’t quite done (1.018 and 1.020).  But we were done waiting (and they were done bubbling), so we bottled them anyway. We tasted the gravity samples for each batch, and there were definite differences between them.  The plain saison was very dry.  The Brett. batches all had some funkiness to them, though it was hard to tell them apart.

Then we siphoned them straight into a racking tip.  There was a little more loss than with a single big batch, but we wound up with around 4 gallons bottled (6x 22 oz. and 32x 12 oz.).  And it was definitely more bother than doing a single large batch.  But I think it’s worth it for the chance to try a ton of options all at once.

Saison Experiment

We have long wanted to brew our own saison.  After all, it’s the style of beer that really opened my eyes to the possibilities of beer and got us more interested in brewing and sampling as much as we could.  But it was only recently when I started reading about saison in the Oxford Companion to Beer that I really understood just how complicated it is.

First of all, while there is a general style of base beer that is the most popular for making saison, you can in fact make sour beer from any base beer.  And then there are several different species of Brettanomyces yeast, each with its own character and intensity.  There are also a couple different kinds of bacteria that sour beer.  And of course, there are a bunch of variables in the souring process, such as when you add Brett./bacteria (primary fermentation, secondary, bottling), or how warm you ferment (Dupont is supposed to ferment at 90°, for example).

So, we found a Saison Dupont clone recipe online that looked about right, and picked up five different vials of yeast: a straight saison yeast, three different Brett. yeasts (B. bruxellensis, B. claussenii, and B. lambicus), and Belgian Sour Mix (with Brett. and bacteria).

This was our second all-grain brew, and it went pretty smoothly.  Our 5-gallon water cooler mash tun didn’t hold temperature, but we kept adding hot water until it was warm enough.  The mash and boil went great, and after adding water to make up five gallons, the gravity was exactly on target (1.057).  We also used fine mesh hop sacks this time instead of cheesecloth, which made for much less gunk to filter out of the wort.

After the boil, we put the wort into our bottling bucket and filled five 1-gallon growlers, one with the Belgian Sour Mix, the second with just regular saison yeast, and the last three with saison yeast and one kind of Brett.  We’re hoping this will help us figure out what kind of saison we want to brew a larger batch of later this summer.  And if everything works out, this should be a great way to try out a bunch of different options in small batches.  There are so many options, especially for mead and cider, and it would be nice to have a good process to try out a lot of options and see what we like.

All Packed Up

Our first keg of homebrew kicked last night.  Which was good timing, since we’re leaving the country tomorrow.  I packed up the kegerator and cleaned out the keg today, packing everything away until we get back in June.  There was a minimal amount of swearing and I only cut myself once.

Tomorrow we fly to Amsterdam, for a 5 month sojourn in the Netherlands.  I’m really looking forward to easier access to European beer.  Though I noticed that St. Somewhere just released a new beer, so I’m already missing Florida beer, and I haven’t even left yet…

Autumn Mead

We had the first bottle of mead just before Thanksgiving, and we’re pretty pleased with the results.  It has a very sweet, delicate honey flavor and is nicely dry.  There is still a little yeasty funk, but mostly from the sediment.  It was a nice accompaniment to Thanksgiving dinner.

So of course we’re already thinking about the next batch (which will probably have to wait for summer).  Some improvements we’ve got in mind:

  • Add a stronger-tasting honey (like Tupelo or Everglades) to the mix for a bolder flavor.
  • Using apple juice instead of water, again for a bolder flavor and a more cidery taste.
  • Switching to a yeast more suited to Champagne or cider.

We’re also thinking of brewing some cider, so we might do a few different batches with different combinations.

Kegging, Interrupted

The dubbel finally got done fermenting, after a good shake and another week in a warmer room.  So I headed down to my local homebrew shop, and picked up a used soda keg.  I was hoping to find a new one, because the price difference wasn’t that big and I’ve heard used soda kegs can have reliability problems.  But they haven’t been able to get any new ones in stock recently, and only had two used kegs left, so I picked the one that looked like it was in better condition.

Getting the beer in the keg was much easier than bottles.  It was easy to sterilize and siphon the beer into the keg.  But that’s where the smooth sailing stopped.  First, I found that I’d gotten ball-lock couplers and a pin-lock keg.  So back to the homebrew shop I went and picked up the right couplers.  Then I found that my store-bought 5/16″ gas line wouldn’t fit the 1/4″ pin-lock gas coupler.  I had never imagined that they might use different gas line sizes (I’ve been fiddling around with kegs and plumbing long enough to know better, but for some reason I still expect things to work out by default).  By the time I figured this out, the homebrew shop was closed and the Thanksgiving holiday was upon us, so the beer sat refrigerated but unpressurized over the long weekend.

Once back in town, the homebrew shop was still closed, but luckily my local hardware store helped me jury-rig an adapter.  So I hooked it all up and pressurized to my normal serving pressure (8-10 psi), but the keg was leaking CO2.  I tried reseating the lid and greasing the O-ring, with no success.  I’ve also read that increasing the pressure will help the seal (and speed up the carbonation process), so I cranked up the pressure to 25 psi.  As I increased the pressure, the sound of the CO2 leak changed in pitch, heading from a benign hiss to a worrying whine and then, just before making me truly worried, changed into a satisfying gurgle as the seal took hold and the keg started to pressurize properly.

It was then, crouched behind my kegerator, adjusting the pressure on the regular with a small screwdriver, feeling the frozen condensation on the gas line and regulator shaft, that it occurred to me that I should be worried about the whole Rube Goldberg contraption exploding.  Just in time to rock the 25 psi keg around to help the carbonation get going.  Standing on the other side of the kegerator made the CO2 canister less dangerous, so actually rocking a pressurized keg around on the floor didn’t seem so bad.  Now that’s done, and in theory we should have drinkable beer in a few hours.

Unstuck

carboy next behind computerIt’s been a couple of weeks since we put the dubbel in second fermentation, so I checked the gravity yesterday expecting it to be about ready to keg.  Alas, the gravity was still way too high, only about halfway down to where the recipe calls for final gravity.  We hadn’t seen any bubbling at all recently, so I did some googling on stuck fermentation, and I think the problem is one I never expected in Florida: my beer got too cold!  We’ve had a few chilly nights recently, and it’s possible the beer got down to 60° or so, which can apparently make the yeast go dormant and settle.

So I moved it to the hottest part of the house — right behind my computer.  Our home office is reliably the hottest room of the house, several degrees warmer than other rooms, and we keep our aquarium in there for the same reason.  I gave the carboy a good swirl to stir up the yeast again (above and beyond the sloshing involved in getting it to the other end of the house).  24 hours later, it’s still bubbling every few seconds, but not going nuts like the initial multiplication stage of fermentation.  So I’m feeling good that the fermentation is back on track, and we’ll be able to keg it next weekend.
