crema:

1 cup sour cream
juice from one lime
pinch salt

  • combine ingredients

** flour paste:**

2 Tbsp. water
1 Tbsp. flour

  • mix together in a small bowl and set aside

8 burrito-sized four tortillas
1 can refried beans
taco filling
[enchilada sauce](/recipes(% post_url 2014-02-22-enchilada-sauce-new-mexico %}), but don’t add liquid
shredded cheese

  • make burritos with refried beans, 1/3 cup of taco filling, sauce, and cheese, to taste (do not overfill)
  • brush tortilla with flour paste to seal
  • heat 1” oil to 375°F and fry sealed burritos for 2 minutes per side
  • drain on a wire rack
  • serve with remaining sauce, guacamole, and crema
