refried beans

1/2 onion, chopped
15 oz. can black or pinto beans, with liquid
1/2 chipotle adobo, chopped, plus 1 tbsp. adobo sauce
kosher salt
- place bacon in a cold pan and heat slowly to render out fat
- add onion and sauté until softened
- add beans and chipotle, bring to a boil, and simmer for 5 minutes
- mash beans, remove from heat, add salt if needed
