1 1/2 lbs. fingerling potatoes
2 tbsp. olive oil
1 tsp. salt
pepper, rosemary, thyme to taste

  • wash potatoes and slice lengthwise
  • toss with oil and spices
  • heat baking sheet at 400°F and place potatoes cut side down
  • bake 15 minutes, then stir and bake an additional 15 minutes until crisp
