microwave mashed potatoes
sides | cheese dairy potatoes1 lb. potatoes, cubed
- cover and microwave for 9-12 minutes, until potatoes are fork-tender
- if using plastic wrap, poke a hole to allow steam to escape
2-3 tbsp. butter
1/4 cup milk
2 oz. sharp shredded cheese (cheddar, parmesan, asiago)
salt, pepper, and other seasonings, to taste
- mash butter into hot potatoes, then stir in milk, cheese, and seasonings
