dutch baby:

2 eggs
2/3 cup flour
2/3 cup milk
1/4 tsp. cardamom
2 tbsp. butter

  • whisk eggs, flour, milk, and cardamom to make a thin batter
  • heat a cast iron skillet or heavy pan in a 425°F oven
  • remove skillet/pan from the oven and melt the butter in it
  • pour in batter and bake for 16 minutes

peaches:

2 tbsp. butter
2 tbsp. brown sugar
1 lb. peaches
1/4 tsp. cardamom
1/4 tsp. vanilla

  • melt butter and stir in brown sugar until dissolved
  • add remaining ingredients and cook for 4 minutes

1 tbsp. butter
1/4 tsp. salt
2 tbsp. milk

  • lower heat, add butter and salt and cook for 9 minutes, until peaches are tender
  • remove from heat, stir in milk, and serve with dutch baby
