1 lb. pickling or english cucumbers

  • slice into chips, add to an ice water bath and chill for 2 hours

1 3/4 cups vinegar
3/4 cups water
1 tbsp. mustard seed
1 tbsp. dill seed
1 tsp. kosher salt
1 tsp. sugar

  • combine all ingredients in a sauce pan
  • bring to a boil, then remove from heat and cool to room temperature
  • add cucumber slices to sterilized jars, pour pickling brine over them until covered
  • seal and refrigerate for 24 hours before eating
