2 cups flour
1 tbsp. sugar
1 tbsp. baking powder
3/4 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. black pepper
1/2 cup cold butter, thinly sliced
3 tbsp. fresh chives or scallion greens, thinly sliced
3.5 oz. cheddar, shredded

  • mix together dry ingredients
  • blend in butter with pastry blender
  • fold in chives/scallions and cheddar
  • chill while preparing remaining ingredients

3 oz. ham, finely chopped
2/3 cup milk or buttermilk
1 egg yolk

  • fold ham into dry mixture
  • whisk milk and yolk and pour into dry mixture
  • mix until a dough forms and divide into 12 lumps
  • arrange on a greased baking sheet
  • chill baking sheet for 15 minutes (or chill dough before dividing if you don’t have enough fridge space)

1 egg white
1 tbsp. milk

  • whisk together and brush scones
  • bake at 400°F for 20 minutes, until edges are golden brown and the tops are lightly browned
