3 eggs
1/2 cup flour
1/2 cup milk
1 tbsp. sugar
1/4 tsp. nutmeg

  • whisk into a thin batter

4 tbsp. butter

  • heat a large heavy-bottomed pan at 425°F for 5 minutes
  • add butter and let it melt
  • add batter to the pan and return to the oven for 20 minutes, until the pancake is puffed and golden
  • reduce heat to 300°F and bake 5 minutes longer
  • remove from oven, slice into wedges, and serve immediately with syrup, preserves, etc.
