1/2 cup flour (GF flour works fine)
1/2 cup masa harina or fine-ground cornmeal
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. black pepper
1/4 tsp. garlic powder
1/8 tsp. chipotle powder

  • mix together in a mixing bowl

1 egg, beaten
1/2 cup buttermilk

  • mix into dry ingredients, being careful not to overmix

1/2 small onion, minced
1 jalapeno, minced

  • stir into batter

1/2 cup vegetable oil or lard

  • add 1 tbsp. of oil to each well of a muffin pan
  • heat muffin pan in 425°F oven until oil is very hot
  • scoop batter into a dozen lumps, roll into balls, and put one ball in each muffin well
  • bake about 15-20 minutes, turning once
  • hushpuppies should be well browned and a toothpick should come out clean

2016-08-30 11:23:29: Makes 24, so halve or third for a more manageable amount. Outside was thick and light, not dense, so maybe fry hotter?

08/11/2026: updating this recipe to reflect my most recent attempt to make baked, gluten-free hush puppies. i forgot the onion and jalapeño and Wind and Irina like them a lot. next time i make these, i’ll make some with and some without onion/jalapeño.
