1/4 cup warm milk
2 tbsp. warm water
1 1/4 tsp. yeast
1/2 tsp. brown sugar

  • mix yeast and sugar into milk/water and rest 10-15 minutes until bubbly

1 cup + 2 tbsp. flour
2 tsp. oil
1/2 tsp. salt

  • stir into yeast mixture until a dough ball forms
  • transfer to a lightly-floured surface and knead until smooth, about 3 minutes
  • transfer to a greased bowl, cover and rise until doubled, about 1 hour
  • divide into 4 portions and roll each into a ball and rest 5 minutes
  • roll each ball into a 7” disk
  • heat a lightly-oiled skillet and fry each disk until lightly browned and puffed, about 30 seconds per side
  • brush with butter or garlic butter if desired and serve warm
