Lydia's Scones

2 Tbsp. sugar
1 Tbsp. baking powder
1/4 tsp. salt
1/3 cup butter
2 eggs
3/4 cup whipping cream
- Mix flour, sugar, baking powder, and salt in a large bowl.
- Using a pastry blender, cut in butter and make a well in middle of the flour mixture.
- Beat eggs and cream, and pour into well of flour mixture and stir until just moistened.
- Turn dough onto floured surface and knead 10-12 times, until dough is smooth.
- Divide dough in half, and roll or pat into 6” circle. Cut into 6 or 8 wedges, and place 2” apart on ungreased baking sheet. Brush with additional cream and sprinkle with sugar.
- Bake at 400°F for 12-14 minutes, until lightly golden.
