Biscuits
sides | basic bread breakfast favorite2 cups flour
1 tbsp. sugar
1 tbsp. baking powder
1 tsp. salt
1/2 cup shortening (96g) or butter
1 cup milk for drop biscuits, or 3/4 cup for rolled biscuits
- mix dry ingredients in large bowl
- add shortening and mix with pastry blender until broken down into pea-sized lumps
- add milk and mix thoroughly
- drop biscuits: spoon 12 lumps onto greased baking sheet
- rolled biscuits: knead 6-8 folds, roll out to 1/2” thick, and cut (optionally: brush with milk or butter to help browning)
- bake at 400F (230C) for 10-12 min., until golden brown
cheddar biscuits
- add 1 tsp. garlic powder, 1/2 tsp. parsley, and 1/4 tsp. chipotle powder to dry ingredients
- fold in 1 cup (125g) shredded cheddar cheese before adding milk
2016-09-13 14:46:13: mini batch (2 biscuits):
1/3 cup flour
1/2 tsp. sugar
1/2 tsp. baking powder
pinch salt
1.5 Tbsp. shortening
3 Tbsp. milk
2018-06-28 11:03:50: Partial dairy-free variant:
- Mix all ingredients except milk as normal
- Separate 1/2 cup of dough and add 3 Tbsp. almond milk to make 2 dairy-free biscuits
- Adding 3/4 cup milk to remaining dough, makes 8-10 biscuits
2021-04-21: cheddar biscuit variant:
- Add 2 tsp. garlic powder and 1/8 tsp. chipotle powder to dry ingredients
- Add 6 oz. gratd cheddar cheese after blending in shortening
- Brush with 2 Tbsp. melted butter
