mint syrup

1 cup sugar
1 cup mint leaves
- heat water and sugar over low heat, stirring to dissolve sugar
- in a separate pot, bring a few cups of water to boiling
- blanch mint leaves for 10 seconds, then remove to an ice bath for 30 seconds
- add mint leaves to simple syrup and cover
- cool to room temperature, then puree and strain to remove larger mint fragments
- refrigerate in a glass jar
