2 Tbsp. butter
3-4 Tbsp. flour
1 cup sous-vide brisket juices
1 cup milk
1/2 tsp. thyme, rosemary
1/4 tsp. pepper, garlic powder, chipotle powder
1 Tbsp. sugar

  • make a roux, adding flour until all butter is dried up
  • slowly add liquids while mixing into roux and breaking up lumps
  • add spices and simmer until thickened, about 5 minutes
