Hot Water Crust

½ cup bread flour
1 tsp. salt
- Mix together in a large bowl
6 Tbsp. (80g) lard or shortening
4 Tbsp. (60g) butter
- Mix into flour with pastry blender
½ cup boiling water
- Pour into flour fixture and mix with spoon, then turn out to silicone mat.
- Shape into a ball and let rest 5 minutes.
- Knead if lumpy
- Roll out quickly, shaping into pie crusts while warm, or the dough will get difficult to work.
