- 1 lb. caramunich
- 1 lb. clear candi syrup
- 5 lb. montmorency cherries (not pitted, added after primary fermentation)
90 minute kettle additions:
- 1 oz. East Kent Goldings hop pellets
15 minute kettle additions:
- 1/2 oz. East Kent Goldings hop pellets
- 1 tsp. Irish Moss
5 minute kettle additions:
- 1/2 oz. East Kent Goldings hop pellets
yeast:
- kettle-soured with WLP677 Lacto. delbrueckii and 1/4 tsp. citric acid
- primary: WLP565 Belgian Saison Yeast I
- 1 tsp. yeast nutrient
stats:
- OG: 1.071

- ABV: 7.57%
notes: this batch developed an off-odor that cheesy and foul. we wound up dumping the whole batch, and throwing away the fermenting bucket, tubing, etc. used for this batch.
