1 lb. clear candi sugar syrup
6 oz. Vienna malt
2 oz. Munich malt
90 minute kettle additions:
1 oz. Styrian Goldings hop pellets
15 minute kettle additions:
1/2 oz. bitter orange peel
1 tsp. Irish Moss
1/2 oz. East Kent Goldings hop pellets
5 minute kettle additions:
1/4 oz. East Kent Goldings hop pellets
yeast:
1 vial Belgian Sour Mix I yeast (WLP655) #9a
1 vial Belgian Saison I yeast (WLP565) #9b
1 vial Brettanomyces Claussenii yeast (WLP645) #9c
1 vial Brettanomyces Bruxellensis yeast (WLP650) #9d
1 vial Brettanomyces Lambicus yeast (WLP653) #9e
differences from standard recipe:
- Mash grain for 90 min.
- Boil for 90 minutes
- After boil, rack 1 gallon of wort to each of five different growlers and pitch
yeast separately, making five variants:
- #09a: WLP655 (Belgian Sour Mix I yeast)
- #09b: WLP565 (Belgian Saison I yeast)
- #09c: WLP565 + WLP645 (Brett. Claussenii yeast)
- #09d: WLP565 + WLP650 (Brett. Buxellensis yeast)
- #09e: WLP565 + WLP653 (Brett. Lambicus yeast)
