Pie Crust

1 cup (135g) flour
1/2 tsp. salt
6 1/3 Tbsp. (76g) shortening
3 Tbsp. (45ml) cold water
- Mix flour and salt in large mixing bowl.
- Mix in shortening with pastry blender until it’s broken down into pea-sized chunks.
- Add water and mix thoroughly.
- Flatten into a disc, then roll out to desired thinness.

07/16/2024: Blind baking instructions:
- line pie dish with pie crust and parchment, then fill with weights or stones
- bake at 375°F for 25-30 minutes
- remove weights and parchment, and continue baking until golden brown, about 10 minutes
- remove from oven and let cool completely
