2 tbsp. gochujang
3 tbsp. brown sugar
1 tbsp. soy sauce
1 tsp. red pepper flakes
3 cloves garlic, minced
1” ginger, minced or grated
1/2 tsp. black pepper
1 lb. chicken, cubed

  • combine all ingredients and stir to combine
  • chill for 2 hours

2 tbsp. neutral oil
1/4 cup water
marinated chicken
6 oz. low-moisture mozzarella slices (optional)

  • heat oil and water in an oven-safe skillet or dutch oven
  • stir fry chicken until chicken is cooked
  • if using, top chicken with mozzarella and broil until melted and browned
  • service with rice and roasted vegetables
