chicken enchilada filling
main | chicken meat mexican1 tbsp. butter
2 tbsp. flour
1/2 cup chicken broth
- make a roux then slowly whisk in broth to make a smooth sauce
3/4 - 1 lb. shredded chicken
1/4 tsp. onion powder
1/4 tsp. garlic powder
1/4 tsp. pepper
1/4 tsp. cumin
1/4 tsp. chipotle powder
- add chicken and spices, then mix well
1/4 cup milk
- stir in up to 1/4 cup milk to desired consistency

01/05/2026: made enchiladas with a can of cream of chicken soup, and they were great, but they ahd a little more liquid than i would like. so i found a recipe for making cream of chicken soup and think i’ll try this combination next time.
