1/2 lb. beef
1/2 onion, chopped

  • press beef in even layer on the bottom of a skillet and sprinkle with onion
  • cook undisturbed until meat is well-browned, 6-8 minutes

3/4 tsp. cumin
1/4 tsp. chipotle powder
1/4 tsp. oregano
salt and pepper, to taste

  • add spices to beef mixture and stir while breaking the beef up into small pieces
  • continue cooking until onion is softened, 2-4 minutes

3/4 cup black or pinto beans
1/2 tomato, chopped

  • add to beef mixture and continue cooking until liquids are boiled off

1 tsp. lime juice
4 oz. shredded cheese (jack or mexican blend)

  • stir into beef mixture and remove from heat
  • fill burrito-sized tortillas and roll to seal, sear in a hot pan if desired
