2 tbsp. salt
2 cups water
4 pork chops

  • mix salt and water in a large bowl
  • add pork chops and add enough water to cover
  • rest for 1 hour

1/2 tsp. garlic powder
1/2 tsp. chipotle powder
1/2 tsp. paprika
1/2 tsp. salt
1/2 tsp. pepper
1 tbsp. butter
1 tbsp. olive oil

  • remove pork chops from brine (discard the brine)
  • rinse pork chops and dry with paper towels
  • mix spices and rub over pork chops
  • heat oil and butter in a large skillet on medium heat
  • sear pork chops 2 minutes on each side, then reduce heat to low and continue frying until internal temperature reaches 140°F.
  • remove to a plate, cover with foil, and rest 5 minutes
  • make a pan sauce with the drippings if you want to
