2 lbs. chicken
juice from 1 lemon

  • cube chicken, toss with lemon juice and set aside

4 tbsp. tahini
1 tsp. cumin
1 tsp. ginger
2 cloves garlic, minced
1/2 tsp. chipotle powder
1/2 cup water

  • mix into a paste and set aside

2 tbsp. oil
1 onion, sliced
2 tsp. salt
1/2 tsp. cardamom
1/2 cup water

  • heat oil in a large pot, add onion and fry until it begins to brown
  • add spice mixture and fry until fragrant and oil separates
  • add salt, cardamom, and chicken and cook until chicken is browned
  • add water, stir, and cook over low heat until chicken is tender, stirring occasionally

2/3/25: made this a couple nights ago and it was great. i added 1.5 cupps of water, which was a little too much, so going with 1 cup here.
