1/3 cup bread crumbs
1/3 cup milk

  • soak bread crumbs in milk for 20 minutes

2 tbsp. olive oil
1 onion, diced

  • heat oil in a skillet and saute onion until softenend for 5 minutes
  • reduce heat and cook for 15 minutes

1 lb. ground beef
1 lb. ground pork
bread crumb mixture
onions
2 eggs
2 tbsp. parmesan
1/4 bunch parsley
3 clove garlic
2 tsp. salt
1 tsp. pepper
1 tsp. italian seasoning (or 1/4 tsp. each of basil, oregano, parsley, and 1/8 tsp. thyme and rosemary)
1/2 tsp. red pepper flakes

  • combine all ingredients, cover, and refrigerate for 1 hour
  • shape into 30g meatballs and chill for 2 hours or freeze
  • bake at 350°F for 25-30 minutes, until temperature reaches 165°F
