450g corn kernels (about 3 cups or 4 ears)
140g scallions (1 bunch), thinly sliced
1/4 cup fresh cilantro

  • toss together until well combined

1 cup flour
1 tsp. baking powder
3/4 tsp. kosher salt
3/4 tsp. pepper
2 eggs
1/4 cup milk or half-and-half
50g cotija cheese (about 1/2 cup grated)

  • mix dry ingredients, then add eggs and milk and whisk until well combined
  • fold in corn mixture and cotija

1/4 cup neutral oil for frying

  • heat oil over medium heat in a large skillet
  • drop 1/4-cupfuls into the oil and fry until golden brown, about 4 minutes
  • flip and fry on the other side for 2-3 minutes until golden brown
  • drain on a wire rack while making additional batches

01/02/2025: i made these a couple of nights ago, and they were good. i had gathered several other things as accoutrements (i made some brussels sprouts, and some other leftovers) — but these were substantial enough to be the main course.
