chile verde

salt and pepper
2 Tbsp. vegetable oil
1 onion, diced
3 cloves garlic, minced
1 1/2 tsp. cumin
1 1/2 tsp. oregano
2 cups chicken stock
- trim pork shoulder, cut into large cubes, and season with salt and pepper
- heat oil in large pot and sear pork, then remove to a plate
- add onion and saute until tender
- add garlic and saute 1 minute
- add cumin, oregano, and stock
- return pork to the pot and cover
- simmer pork for 2-4 hours
2 cups salsa verde
- add to pot and simmer for 30-45 minutes
- shred pork and serve as a stew, or drain and use to fill tacos or burritos
