ramen with pork belly
main | asian japanese meat pork soup1 Tbsp. oil
1 lb. pork belly, cubed
4 cloves garlic, minced
1” fresh ginger, peeled and sliced
2 poblano peppers, diced
1 quart chicken stock
1.5 quarts water
1/4 cup mirin
2 Tbsp. soy sauce
4 eggs
ramen noodles
4 scallions
1-2 cups snap peas, trimmed and sliced
- sear pork belly in oil until pan develops some char
- add garlic, ginger, and peppers and saute until fragrant
- add stock, water, mirin, and soy sauce and bring to a boil
- add eggs and simmer for 15 minutes, then remove to an ice bath and peel
- simmer for another 30 minutes
- add scallions and snap peas to soften
- add eggs and simmer for 5 minutes, then remove and slice
- add noodles and cook until tender
