tater tot casserole
main | american bacon egg1 tbsp. butter
3-4 servings tater tots (frozen)
- butter baking dishes and line bottom with tater tots
1 tbsp. oil
1 onion, diced
1 poblano, seeded and diced
- saute onion and pepper in oil for 5 minutes, then sprinkle over tater tots
3/4 cup shredded cheese (cheddar/jack or mexican blend)
4-5 slices bacon, cooked and crumbled
- sprinkle over tater tots
6 eggs
1/4 cup cream
salt and pepper, to taste
- beat eggs and cream, season with salt and pepper, and pour over tater tots
- bake @ 350°F for 45 minutes, until egg mixture is set
- serve with black beans and ranchero sauce
