vegetarian chili
main | beans mexican vegetarian2 tbsp. olive oil
1 onion, chopped
1 bell or poblano pepper, chopped
2 stalks celery, chopped
- saute vegetables until tender, 7-10 minutes
1 tsp. salt
4 cloves garlic, minced
1-2 tsp. powdered chili
1 tsp. paprika or 1/2 tsp. chipotle powder
2 tsp. cumin
1 tsp. oregano
- add and stir for one minute
2 15 oz. cans diced tomatoes
2 15 oz. cans black beans
1 15 oz. can refried beans
2 cups water or broth
1 bay leaf
- add and bring to a simmer for 30 minutes
salt, to taste
1-2 tsp. lime juice or red wine vinegar, to taste
- remove bay leaf, taste and add salt and lime juice/vinegar to taste
