2 Tbsp. oil
1 onion, diced
1-2 stalks celery, sliced
2 carrots, or 12 baby carrots, sliced
4 cloves garlic
1 1/2 cups diced ham
1 lb. dry beans
2 quarts chicken stock
1 bay leaf
1 tsp. thyme
1 tsp. red peper flakes
salt and pepper to taste

  • saute onion, celery, and carrots 5 minutes
  • add garlic and saute 1 minute
  • add ham and saute 3 minutes
  • add remaining ingredients and pressure cook on high for 30 minutes
  • natural release for 10 minutes, then quick release
