6 chicken thighs
1 tsp. salt
1/2 tsp. pepper
1 tsp. paprika
2 Tbsp. olive oil
- toss chicken with spices
- heat oil in instant pot on saute and brown chicken on both sides
- remove chicken and set aside
1 onion, diced
1 poblano pepper, diced
9 baby carrots, cut into coins
4 cloves garlic, roughly chopped
- saute in instant pot 6-8 minutes
1 1/2 cups chicken stock
1/4 cup white wine
2 tsp. oregano
2 tsp. paprika
2 tsp. cumin
2 tsp. salt
1 tsp. chipotle powder
1/2 tsp. annatto powder
1/2 tsp. red pepper flakes
14 1/2 oz. can diced tomatoes
1 cup white rice
- add stock and wine to pot and bring to a simmer, scraping up any brown bits
- add spices and tomatoes (including juices) and stir
- rinse rice and sprinkle over vegetables and liquids
- top with chicken thighs and seal lid
- pressure cook on high for 10 minutes, then let naturally release for 10 minutes
1/4 cup green olives, sliced
1 cup frozen peas
juice from 1 lime
- open lid, remove chicken, and shred
- add shredded chicken, olives, peas and stir
- close lid and let olives and peas warm up for 3 minutes
- top with lime juice and serve

12/14/23: rice mix variant:
1.5 lbs. chicken breast, cut into large chunks
juice from 1 lime
2 cloves garlic, minced
1 chipotle in adobo, chopped
1 tsp. salt
1 tsp. oregano
1/4 cup cooking sherry
- mix all ingredients in ziplock bag and marinate for a few hours
2 tbsp. olive oil
1/2 onion, diced
2 cloves garlic
- saute until tender, about 5 minutes
- add chicken with marinade and saute until browned, about 5 minutes
2 cups boiling water
1 can diced tomatoes, drained
9 oz. package vigo yellow rice
- add water and tomatoes and bring to a boil
- add tomatoes and rice mix and mix well
- reduce heat and cover, simmering for 20-25 minutes until rice is tender and has soaked up excess moisture
note: i used 2 1/2 cups water and didn’t drain the tomatoes, and it was too much moisture. the recipe as written above may be a little dry, so needs monitoring to make sure there’s enough liquid for the rice
