1 onion, finely chopped
- saute onion in oil until tender
2 lbs. cumberland sausgage meat
2 eggs
salt and pepper
- combine sauted onions and all ingredients and mix well
1 batch croissant dough
1 egg, beaten
- roll out dough to a 20x65cm (8x25”) rectangle and cut into four sections that are approximatly 4x12” (10x30cm)
- chill for 10 minutes
- line each rectangle with sausage mixture, and brush the edges of the pastry with egg
- fold over the top, then roll over so the seam is underneath
- brush the top of the rolls with egg, then cut into desired lengths
- bake at 400°F for 20 minutes, until golden brown
