3 large eggs

  • beat until just combined, then set aside

1 tbsp. butter
1/4 cup diced smoked ham
2 Tbsp. diced onion
2 Tbsp. diced green bell pepper
salt and pepper to taste

  • melt butter in a frying pan, then saute until vegetables soften, about 5 minutes

⅓ cup shredded Cheddar cheese
1 pinch cayenne pepper

  • reduce heat to medium-low, and pour in beaten eggs
  • stir briefly to distribute filling, then run spatula along edges of the omelet
  • sprinkle cheese and cayenne over the omelet and cook until top is wet but not runny, about 5 more minutes
  • fold omelet in half and transfer to a plate
