Chicken and Rice
main | chicken meat rice1 Tbsp. olive oil
1 lb. boneless chicken thighs
1 onion, diced
1 poblano pepper, diced
2 cloves garlic, minced
15 oz. canned tomatoes
15 oz. white beans, rinsed and drained
15 oz. chicken stock
2 Tbsp. Creole seasoning
1 cup white rice
- Cube chicken and saute in oil until browned, add to crockpot
- Add remaining ingredients except rice, stir, and cook on low for 7.5 hours
- Add rice, stir, and cook until rice is tender (approximately 30 minutes)
