Saffron Chicken Tagine

¼ cup olive oil
¼ bunch chopped cilantro
1 cinnamon stick
1 whole chicken cut into individual pieces
1 Tbsp. ground ginger
1 tsp. black pepper
1 tsp. salt
1 tsp. turmeric
1 tsp. saffron threads crumbled
- Chop onion and line bottom of tagine.
- Drizzle olive oil over onions and top with cilantro and chicken.
- Pierce chicken to allow flavors to seep in.
- Mix spices in a small dish and sprinkle over chicken.
- Cook on low heat for about 1 hour until chicken is very tender.
