Crockpot Carnitas (Roast Pork)
main | crockpot favorite longish meat mexican pork3-4 lbs. boneless pork shoulder
3 Tbsp. kosher salt
- toss pork with salt, chill uncovered for 1 hour
- blot with paper towels to remove moisture and most of salt
- transfer pork to a dutch oven or crockpot
1 tsp. cumin
1/2 tsp. red pepper flakes
3/4 tsp. pepper
3 cloves garlic, minced
- mix and sprinkle over pork
1/2 onion, diced
2 limes
2 oranges
- add onion and juice from the limes and oranges to the pot
- add lime and orange peels to the pot and mix well
- cover and cook in crockpot (4 hours on high or 8-10 hours on low) or oven (2-3 hours at 300°F)
- remove pork from juices and shred on a large baking sheet
- drizzle 1 cup of juices over the shredded pork and broil for 10-15 minutes to crisp

02/12/2023: this was pretty similar to my crockpot recipe, so i’m just updating it. this was the best homemade carnitas i’ve made, so i’m deprecating most of the other variants and sticking with this one.
