Frittata Lorraine

6 oz. bacon (6 slices)
3 Tbsp. vegetable oil
1/2 lb. potatoes
1 onion
2 cloves garlic
6 eggs
1/4 cup heavy cream
3/4 cup Swiss cheese, grated
salt and pepper to taste
- Cook bacon until crisp and let cool. Crumble and set aside.
- Thinly slice potatoes and finely chop onion. Saute 8 minutes, until tender.
- Stir in garlic, and top with crumbled bacon.
- Beat eggs and cream. Pour in and tilt pan to spread evenly.
- Top with cheese, salt and pepper. Cover, reduce heat and cook for 10 minutes, until eggs are set.
- Broil for 2 minutes to brown.
