Latkes
main | favorite fried jewish potatoes vegetarian2 eggs, beaten
3 Tbsp. flour
1 1/2 tsp. salt
1/8 onion, grated or finely minced
20 oz. potatoes (about 2 medium russets), peeled and grated
1/2 cup oil for frying
- Beat eggs and add flour, salt, and onion
- Grate potatoes, squeeze out moisture, then toss in egg mixture
- Heat oil to 350°F in small frying pan.
- Spoon mixture in 1/4 cup chunks into hot oil, pressing down to form thick patties
- Brown on one side, about 3 minutes, flip and brown other side
- Remove to drain on paper towels
- Serve with applesauce and sour cream
