1 3/4 cups (350g) sugar
1 cup (2 sticks) butter
3 eggs
2 tsp. vanilla
2 1/2 cups (285g) flour
1 tbsp. baking powder
1/2 tsp. salt
1 cup milk

  • cream eggs and sugar, then mix in eggs one at a time, then add vanilla
  • mix flour, baking powder, and salt in a separate bowl, and add alternating with the milk (do not overmix)
  • divide batter between two cake panes (lined with parchment and greased)
  • bake 27-31 minutes @ 350°F, until a toothpick comes out clean (tent with foil to prevent overbrowning)
  • rest in cake pan for 10 minutes, then cool completely on wire rack before frosting
