5 tbsp. cornstarch
1/2 cup cocoa powder
1 cup sugar
1/4 tsp. salt

  • mix thoroughly in a saucepan, breaking up lumps

4 cups milk

  • mix into dry ingredients a bit at a time until dry ingredients dissolve
  • cook over medium heat, stirring constantly, until boiling
  • boil for 1 minute then remove from heat

2 tbsp. butter
1 tsp. vanilla

  • stir into pudding
  • pour pudding into ramekins and place plastic wrap directly on the surface to prevent a skin from forming
  • let cool then chill for 1 hour to set

yield: eight 6 oz. servings

11/06/2024: made this yesterday and it was good — but i divided into six ramekins and they were overfull. next time i would halve the recipe and divide into four servings.
