2 1/2 graham crackers
1/2 cup powdered sugar
3/4 cup peanut butter
1/4 tsp. salt

  • process graham crackers in food processor
  • add remaining ingredients and process until will mixed

6 oz. dark chocolate (bar or chips)

  • if using bar chocolate, chop it up into chip-sized chunks
  • melt 4 oz. of chocolate in 30 second microwave bursts, stirring after each burst
  • add remaining chocolate and stir until melted and smooth
  • put 1-2 tsp. of chocolate into each muffin wrapper, using a spoon to coat the sides
  • tap the muffin pan to settle the chocolate to the bottom of the wrappers and chill for 10 minutes to set the chocolate
  • spoon 1 Tbsp. of the filling into each wrapper
  • top each wrapper with 1-2 tsp. of chocolate, then tap the pan to smooth the top

10/29/23: i’m (obviously) using natural peanut butter, so needed to increase to 3/4 cup — the texture is grittier, but the taste is so much better.
