apple cider marshmallows
dessert | candy marshmallow2 packets gelatin powder
80g apple cider
- mix in small microwave-safe bowl and set aside to bloom
80g apple cider
93g honey or maple syrup
225g brown sugar
1/4 tsp. salt
- heat in a large pot, stirring until sugar dissolves
- bring to a boil and boil without stirring until temperature reaches 250°F
1/2 tsp. vanilla
1 tsp. cinnamon
- pour sugar syrup into stand mixer bowl and let cool a few minutes
- microwave gelatin mixture for 10 seconds to liquify, then pour into sugar syrup
- mix with whisk attachment for 10 minutes, adding vanilla and cinnamon
- the marshmallow will pull away from the sides of the mixing bowl when done
- scoop/pour into parchment-lined and greased 8x8” pan
- smooth the top with a greased spatula and let cool at room temperature
1/2 cup powdered sugar
1 tsp. cinnamon
- mix well and break up any clumps
- dust over marshmallow and cut with a greased knife
- roll cut marshmallows to coat all sides
