dessert | american chocolate marshmallow- prepare graham cracker mixture and and line one 9” pie dish or 12 paper-lined muffin wells, mini pie dishes, or ramekins
- press down with the bottom of a measuring cup to compact and flatten mixture on the bottom (and up sides if making a 9” pie)
12 oz. semisweet chocolate chips
1/4 tsp. kosher salt
6 oz. heavy cream
- put chocolate chips and salt in a heatproof bowl
- heat cream to steaming and pour over chocolate chips
- mix well and spoon into pie dish(es)
- chill to set
- prepare marshmallow and spoon onto pie dish(es)
- brown with a torch or bake at 400°F for about 5 minutes
6/6/23: These were great, but a little much in a 6 oz. ramekin. The marshmallow was also too tough, so maybe keeping syrup below 230 would be better, to make a non-setting marshmallow?
