chocolate ice cream

2 Tbsp. plus 2 tsp. cocoa
- whisk together cin a small pan, bring to a boil, then simmer for 30 seconds
4 oz. chocolate chips
1/3 cup cream
- add chocolate chips to cocoa mixture and stir until melted
- add cream and stir until combined
2 egg yolks
1 cup milk
1/2 cup sugar
1/4 tsp. salt
1/2 tsp. vanilla
- beat eggs in a small bowl and set aside
- heat milk, sugar, and salt in a small pan until steaming
- pour hot milk mixture into egg yolks in a thin stream while mixing
- return yolk mixture to the pot and heat until it reaches 170°F
- remove from heat and add vanilla
- pour through a mesh strainer into chocolate mixture and mix well
- place plastic wrap on the surface of the mixture and let cool to room temperature
- chill mixture, then process in ice cream mixer following mixer instructions
