1/2 cup light corn syrup
1/4 cup butter, softened
1 tsp. vanilla
1/4 tsp. salt
3 cups powdered sugar
food coloring (4 drops yellow, 2 drops red)

  • mix corn syrup, butter, vanilla, and salt until smooth
  • add powdered sugar, one cup at a time, while mixing
  • remove one third of mixture, and add food coloring until desired color
  • cover and chill mixture until firm (2 hours)
  • to make an egg, make a marble-sized ball of yellow mixture, about 1 tsp.
  • make a larger ball of white mixture, about 1 Tbsp., then make an indentation and wrap around the yellow ball, then shape into an egg shape.
  • refrigerate until firm (3-4 hours)

12 oz. chocolate chips
2 Tbsp. shortening

  • microwave chocolate and shortening in 30-second bursts, stirring after each time until melted
  • dip each egg into chocolate, place waxed paper, and chill until firm (1-2 hours)

03/07/2022: Making a half batch yielded a 24 one inch balls. A half batch of chocolate was plenty to coat them once. Other recipes say to dip twice, and I think that would get closer to the original’s chocolate-to-filling ratio.
