3/4 cup milk
2 1/4 tsp. yeast

  • warm milk to 110°F, add yeast and set aside

2 Tbsp. butter, softened
1/4 cup sugar
1 egg
1 egg yolk
1 tsp. vanilla extract or liquor
1/2 tsp. salt
2 1/2 cups flour

  • cream butter and sugar
  • mix in egg, yolk, vanilla, and salt until well combined
  • slowly add the flour and yeast/milk mixture in small amounts and continue mixing until a soft dough forms
  • switch to dough hook and mix for 5 minutes
  • transfer dough to a greased bowl, cover, and let rise (or refrigerate overnight to make paczki early in the morning)
  • roll out to 1/2” thick and cut into 3” circles
  • cover with a damp towel and let disks rise about 30 minutes
  • fry in 350°F oil 2-3 minutes per side, until golden brown
  • drain on paper towels and fill, roll in sugar, or glaze while still warm
