1/2 cup (113g) butter, softened
1/2 cup (100g) brown sugar
1/2 cup (100g) sugar

  • cream together in a stand mixer

1 cup (250g) peanut butter
1 tsp vanilla
1 egg

  • add to mixer and mix until incorporated

1 1/2 cup (180g) flour
3/4 tsp baking powder
1/4 tsp. salt

  • mix together then slowly add to batter, mixing until incorporated
  • roll into 1” balls (26g), then flatten with a fork in a criss-cross pattern
  • bake at 350°F for 10 minutes
  • cool completely before removing from baking sheets

yield: 30 cookies
