Banana Cream Pudding
dessert | banana fruit pudding1/2 cup (1 stick) butter
1 cup sugar
3 bananas, peeled and cubed
- Melt butter and heat until it starts to sizzle
- Add sugar, stir well, and cook on medium-high heat until it begins to brown (3-5 min)
- Add bananas and cook while stirring until smooth (about 3 minutes)
- Set aside
6 egg yolks
2 tsp. vanilla
2 Tbsp. cornstarch
1/2 cup sugar
2 cups half and half
- Combine yolks, vanilla, cornstarch and sugar in a bowl
- Head half and half over medium heat
- Pour half of half and half into the bowl, stirring constantly, then whisk until smooth
- Add remaining half and half and continue stirring
- Add mixture to saucepan and cook until thickened (6-8 minutes)
Assembly:
- Make alternating layers of pudding and banana mixture, topping each layer with crumbled vanilla wafers.
