Wind's Chocolate Ginger Cookies

1 cup sugar
6 Tbsp. butter, melted
2 eggs
6 Tbsp. cocoa powder
1 tsp. vanilla extract
1 cup flour
1 tsp. baking powder
pinch salt
1/2 cup semi-sweet chocolate chips
1/3 cup candied ginger, minced
1/2 cup confectioner’s sugar
- Beat sugar, butter, eggs, cocoa, and vanilla until smooth and creamy.
- Add flour, baking powder, and salt, and mix for 2 minutes.
- Stir in chocolate chips and ginger.
- Cover and refrigerate dough at least 2 hours.
- Roll dough into 1” balls and coat generously with confectioner’s sugar.
- Place 1” apart on cookie sheet.
- Bake at 350F for 10-12 minutes, until tops looked cracked – don’t over bake.
